How goes it out there to all of those on this glorious Monday afternoon?!?! And no.. no one spiked my water.. can’t someone be happy once in a while.

So I was tweeting earlier that I would love for a healthy lunch to just appear on my desk without any effort. And ta-da…

.. I present you with a veggie sub (w.cheese) and baked lays! The lunch God’s where looking out for me today!

I also munched on some very blue popcorn from Coastal Popcorn purchased this weekend. This was cotton candy..

…what a great 3 o’clock snack 🙂 Perhaps it’s the sugar rushing to my head making me so happy at the moment. Who knows?!?

So I’m attempting this weekly challenge idea one more time! Second time is a charm.. right?!?!

Week #3

  • 25 lunges each leg

That is it. Only one word: SLACKER.

I would love to write, that  this weekend was crazy and I didn’t have a second to post. But that would be a lie. Yes… I was very busy.. Yes.. I took pictures of everything almost everything I ate. NO.. I didn’t post!

Friday night was a couch date night. Ended up watching Leap Year from Netflix. First of all.. I LOVE Netflix. Second of all.. I LOVED Leap Year. Makes my urge to go to Ireland and find a man with a brogue that much stronger. Sigh. Someday.

Saturday morning was Kickboxing with Diane (Love that lady!) – Then a surprise shopping trip with Mom. I’m in search of a dress to wear to a rehearsal dinner in April and I want it to be GREAT. Let’s just say the 16 didn’t fit.. it was to BIG. Yippiee 🙂

Sunday morning was more Knockout with Diane, then grocery shopping and finally chili time! A long-lost friend came over for dinner so it was great fun 🙂 I know.. sadly no photos… again SLACKER!

Last night I packed up my bags and was ready to head to the gym early morning today. Needless to say that DIDN’T HAPPEN. I just don’t get it. Sunday morning class starts at 7:15AM and I have no problem getting there… on a Monday morning however, 7:15AM might as well be 5:15AM! I just can’t get up. It makes be crazy. The real purpose for pushing with an early morning workout is due to the fact that I start classes tonight. So every Monday and Wednesday I’ll be in class until 9:20! Which is great and I’m excited about it.. just limits my time elsewhere.. like the gym! I don’t want to be one of the gym brats, but it totally messes with  your chemical balance when you work out all the time and then just stop… at least for me. I’m not saying that I’m done with the gym.. I guess I’m saying I’m not one that loves change. Therefore, I need to figure out a way to actually get up on the weekdays when my alarm goes off and not roll over for another hour or so. Hmmm… anyone have any ideas?!?!?

As far as weekly challenges go.. this will be an off week. There are things that I’m hoping to accomplish this week, and I’m not entirely sure how to included them into the weekly challenges. I’ll keep you posted!

Anyway, Today is Monday January 24, 2010. (Pointing to a calendar as we read along. From the student teaching days. Starting to miss them. Is it bad to miss them after 5 years?!?!?)

Just polished off a tub of chips… at least they were veggie chips… sadly.. I still want more.

It’s just one of those days. You know when you wake up, but you rather just go back to bed?!? Yup it’s one of those kind of days when you just want to find a good movie on TV but all you seem to click on is the Best of Cakes, Ace of Cakes or Cake Boss! This makes me REALLY want cake. And there are no birthdays or celebrations involving cake in my near future. Hmm. Guess I’ll have to wait this one out!

Last night, my cousin and I went to a few local bars. After 30 minutes of ‘checking the area out’ I decided I immensely miss my prior residential status. Sigh. At least I can visit!

This coffee is my favorite of the moment. Another purchase from Stew Leonard’s. Wish this store was closer to my house.. on second thought.. maybe not.. I would probably be there daily!

Frosty’s Favorite = Leah’s Favorite

After some early morning knockout yesterday I was craving French Toast. I had no other option then to come home and make some! Leah’s version on French Toast.

2 pieces of sprouted bread (yup. I know.. I buy this bread in the freezer organic section. It has to stay in the freezer which works for me. I just take out what I need and toast it up!) I dipped this in an egg mixture of: 1 whole egg, cinnamon, vanilla and I decided to put some coco powder in too! Great choice. Through it Placed it in a pam sprayed pan. Topped with blueberries, bananas, guava nectar and sprinkle of coconut butter. So Yummy!

Then I needed some Brown Sugar Kisses 🙂

Brown Sugar Kisses

  • 3 egg whites
  • 1/2 cup light brown sugar
  • 1/2 teaspoon vanilla extract

Heat oven to 225ºF.  With a mixer, beat the egg whites on high until soft peaks form.

Slowing beat in brown sugar and vanilla. I then used the easy cake decorator from Pampered Chef (but a zip lock bag would work too!) to create meringue drops on a cookie sheet.

Bake for 1 hour 15 minutes. Turn oven off. Open door. Let cool for 1 hour.

These were the easiest cookies to make. I have never created a meringue before. It was really fun to watch what happens when there are egg whites under the beaters!

Each cookie is only 11 calories.. even better news!

Remi was patiently waiting for one to drop. No such luck this time… perhaps next time!

(Boy does this dog need a haircut! Tomorrow is the day!)

PS – Weekly Challenge #2 starts today 🙂

Check on the Weekly Challenge Page. Week 2 Challenges are up and ready to be attacked!! How did everyone do last week? Are the challenges too challenging? Should I be cutting them down a bit? Is anyone even reading this and following along?!?!

Anyway. The other day I wanted some quiche really badly.. I mean.. like.. RIGHT NOW! So I decided to create some. I have a BL Calendar on the side of my fridge, so that is where the base recipe came from. 

Mini-Quiche

Once again I didn’t really measure anything out! Woops. In a bowl I added the following things:

  • 3 eggs
  • 1/2 skim milk
  • cheese (I only had shredded mozzarella and sliced swiss. Add some shredded and diced the sliced)
  • 2 small tomatillos – (They were in the house. Thought they might work nicely.)
  • handful of steamed broccoli
  • 1/2 corn – (I was attempting an overload on the veggies.)
  • S&P
  • You could add so many different things. The options are endless!

Then I sprayed a muffin tin with pam, and divided mixture evenly! I was able to get 7 mini-quiche out of the batch I made.

Bake at 350 for 10-12 minutes. Cool 2 minutes.

Serve your perfectly yummy mini-quiche!

 Yesterday I found this beauty in my fridge. I think it was a leftover food item from NYE.

I wasted NO time.

After kickboxing this morning, I headed to my parents house. We decided to go see the The Dilemma! I don’t know what it is about movie theaters, but if I don’t have something to eat I feel like I’m missing out. I didn’t really want to blow eating healthy and working out all week, so I decided to pack some snacks.

It worked like a charm. I still was able to crunch and eat, yet not kill all the work I’ve done. I packed these new popcorn chips, dried mango and 2 clementines.

Oh.. and a new bar I found at Stew Leonards the other day!

Glad the sun decided to come for a quick visit today!

Don’t forget about our challenges 🙂

After a failed attempt to get out of my house last night.. I was really excited to get out and about today. I got a call from my parents house asking for some help to dig out!

After digging and digging and a lesson with a snow blower.. we made some progress.

My Mom made an awesome lunch. Eggs, bacon and homemade popovers! Sooo Yummy. Sadly I left my camera and all my photos at my parents house. Big booo! What a loser.. LOL Good thing I bring my phone with me everywhere… this girl travels with multiple cameras!

Finally got another class in this week. I couldn’t get out of my driveway for a class last night.. and yes.. I had a meltdown! But tonight it was all about spinning!  I’m starting to really like my spin class. Sabrina, the teacher is pretty cool too!

So… how is everyone doing on their Weekly Challenges?!?! So far I’ve got 3 classes in, 50 crunches and 50 reverse crunches in. Need to get 50 more crunches and 50 more reverse crunches and all the oblique crunches and one more class. I’m crunched out! I’m sure you are all doing great! Keep it up.

2 new eats I found today:

Turkish Figs. I’m addicted. Period. They are soo good. 120 calories for 2 pieces, 0g fat, 6g fiber. Sign me up:)

and Qbel. OMG. So good. They are chocolate straws that come in different flavors. I of course choose PeanutButter. They are all natural Chocolate Covered Wafers.  130 calories for 2 rolls.

Isn’t it just a great day in the neighborhood?!?!

I somehow managed to fall asleep last night while watching.. um.. holy crap… I can’t even remember.. I was THAT tired! Anyway.. I was up n’ at them bright and early!

I managed to get out the door with 15 minutes to spare and knew exactly where to go!

I present to you a toffee-NUT skinny latte and a blueberry granola bar! I’ve been saving the bar for my 10 am snack.. it’s almost time! 

Yesterday I was on FB looking around and a IM pops up. It’s my friend Steph. We have been talking about running another 5K every single time I see her. It’s one of those mental things to have a goal in mind. When I have something to work towards, running and workouts seem so much easier. Anyway, within an hour or so I was signed up and ready to go. So. Now begins training for a 5K. I know I have run a 5K before, but my goal this time is to beat my PR! Hmm… this might be a tricky one! Thanks Steph.. for that little push I needed. Anyone else in the area need a 5K for motivation.. check it out!

How is everyone doing with their challenges? (Read here if you have not a clue of what I’m talking about!) After reading through them yesterday.. I realized it might be more than I thought! My goal is to get through as much as I can and then rethink for next week!

Tomorrow is January 10th. The beginning of week 1 of alilofthisalilofthat’s Weekly Challenges! Are you ready? Tonight is the night to drink the red and snack on the home-made chex mix! (Both have been accomplished at my end.) As for tomorrow starts the day of keeping track. Get out your notebooks, pens, pencils, whatever ya need! This is the 1st day of the rest of your life. Make it a good one!

I have great news! Last nights kickboxing class was successful. I think I have turn the corner, fluffed the pillows, rounded the bend.. however the saying goes… with my attitude towards the gym. It was a close call… and I was hoping I didn’t lose it for good.

I realized that not every single workout may be amazing. Some make just suck.. plain and simple. Some may be great. And some may be just OK.

My friends and I have been talking about starting something to keep ourselves on track! What is better then weekly challenges?!?! Yesterday afternoon my co-worker/life long friend  and I decided that we needed to start somewhere, so we put together week 1.  I will post them here every week. My goal is to post the challenges a few days in advance so you know how to plan your week, etc. I will be looking for imput on the different components for each week. I hope to start a little group coming to this page and keeping up to date! I haven’t set an end date, and maybe in the comments we can come up with some sort of reward at the end. In this moment.. I have no idea!

 This is just a foundation block and I plan on building a castle!

Week 1 doesn’t start till Monday January 10th! Plenty of time to prep for the week.

Failing to prepare is preparing to fail!

As for eats these past few days.. it’s been boring leftovers! I’m looking forward to making a nice yummy home cooked dinner tonight!
