I was at Wal-Mart buying trash bags, shampoo, Halloween socks – you know…. the stuff you just NEED. And all I wanted to do was bite someones head off. It wasn’t good. I didn’t like the feeling, I knew I had to get to the gym asap. I have been ‘accidentally’ avoiding a kickboxing class that I used to go to weekly. It’s an intense class. NON-STOP for 50 minutes. I laced up my sneakers and bolted to class before I changed my mind. I quietly snuck in the last row, completely avoiding my friends up front (who I haven’t seen in a few weeks). After 15 minutes I wasn’t sure I was going to make it. THAT. WAS. ONE. TOUGH. CLASS. Lesson learned…Consistency is key. Happily I was able to walk and not crawl out of class 45 minutes later. Wake up call #2. I’m going to try my hardest to get some full-blown activity in this weekend. It might be a tough one.

I have a surprise for G on Sunday. It’s nearly killing me not to tell. But I’m trying hard. Let’s see if I make it to Sunday.

NOT ON THIS BLOG. For a wordless post, I would have to make sure I have more than one new photo in que. Hmmm… kind of hard for a rainy, somewhat normal day in the life of Leah. So, I will put the letters together and form words and then get them on the screen, some how, some way!!

I feel like the only way for me to eat right during the day is to make sure I get a good workout in at some point. My workouts mostly take place at night, due to the fact that waking up the morning is like pure torture. I TRY really hard to be a morning person… BUT.. I’m not! SOOOOO. Last night, I went to a somewhat new kickboxing class at the gym. I have taken this class 1 other time with this instructor. I knew that is was going to be a challenge, but I was up for it. I have been taking a lot of weight classes lately and I wanted a good cardio class. Well.. I barely made it out of there walking. Heather (the instructor) is crazy, in a good way! She isn’t a cheerleader/happy/jump-up-and-down kind of person. She is hard-core and means what she says. First this out of her mouth, “Don’t leave my class in the middle, it’s rude! Stick it out for the hour and don’t come back!”. Good lord! We started and within the first 15 minutes I knew this was going to be TOUGH. The front line was a bunch of regulars which is pretty norm for these classes. It was great though, because you could follow them and Heather was able to walk around the room and correct people or help people out! With about 20 minutes left of class, there was a girl behind me moving at about 25% of the rate she should. Heather yelled, “Look at you, how old are you? Let’s get moving!”. At that point I put all my pains and aches aside and went for it! I didn’t stop. I just kept going. Now there was 5 minutes left of class, I thought ok I made it right??!?! WRONG!! It was then time for jump squats. I’m a decent jump squatter. However, after 55 minutes of INTENSE cardio I didn’t have much left. I was on jump 2 and Heather comes over, stands behind me, and pushes me down after jumping up. I thought, Ok, I’ll give her a few more and she’ll walk away and I can breathe (aka slow down). Little did I know, Heather planned on sticking around for while. She NEVER left! She pushed me down another 23 times. I almost gave up towards the end, but she just kept saying, “Don’t stop now!”…. and so I didn’t! When the count was down to 1, I knew I could finish. In the end, it was the best experience ever! As we were cooling down and stretching out, Heather came to every person and tapped them on the back and said, “good job”! I think I have found my new favorite Tuesday night class ūüôā

So long story short…when you think you are about to die, push, push a bit more, sometimes you can surprise yourself!

So.. It’s amazing when people mention this blog to me. In the beginning I used to tell my friends (well really, whoever I saw and would listen) to read the BLOG.. but that got old fast. I then decided why pretend to write anymore. BUT. I was missing it. I was missing the act of putting my feelings down on paper (eek. or a screen in this case!). I then decided I would continue with this little project. If for no one else, but for ME. If taking photos, writing and posting keep the french fries, milkshakes and triple cheeseburgers out of my mouth.. SO BE IT.

So THANK YOU.. to those who actually do read this shit amazing blog.. LOL. You all make this so much more meaningful than you might ever imagine!

Rewind to yesterdays lunch.

Who doesn’t love gift certificates!?!?!?

Went to Stockbridge… a great small lunch/dinner place downtown. I couldn’t believe how busy it was. I ended up ordering a lentil burger on salad. So good.

Stockbridge is known for their cheesecakes, so I couldn’t leave without sampling some desserts.

Red Velvet Cupcake and a oreo truffle. I honestly thought the cupcake was OK. The truffle on the other hand.. was AWESOME:)

After all those sweets.. I hit the gym for a spin class. I find it very funny how I become almost addicted to something and NEED ¬†to do it all the time. Then I’ll find something else and become addicted to that. Let me explain.. 8 or so months ago it was Zumba. I just couldn’t get enough of it. I went to classes ALL THE TIME. I then moved back to CT and couldn’t find a teacher I loved and became bored with it. I then moved on to KnockOut. KnockOut is an all bag class, choreographed to music with a heavy impact on martial arts. Kickboxing was also thrown in there for a bit. And NOW.. it’s all about spinning. It’s like a drug. I could easily spend hours at the gym and go to numerous spinning classes. Sigh. But real life gets in the way of that. I must learn to do all these things on an even level. To much of one thing is NEVER good.

Anyway, spinning was awesome! I also got to chat with a long-lost friend. Someone whom I haven’t seen in easily 12 years or so! Love reconnecting with old friends:)

I’ve been dying to try the laughing cow cheese wedges in pasta. I’ve seen it all over the blogosphere and last night was my turn!

I put 3 of these in this…

Mixed it around till they melted. I tasted it, and was not in love ūüė¶ It was so boring. So I added some salad fixin’ and it was much better. (Side note: this made 2.5 servings)

Interesting combo.. but I would definitely do it again. With all this eating healthy, I have come up with some crazy combos. Some work.. some don’t.. but I’m always asking myself what else can I add to that!

Breakfast was Siggi’s and granola! (The orange turned into a 10 o’clock snack!)

Have you ever had siggi’s before?!?! It definitely takes some getting used to. After the first bite, it only gets better!!

Not entirely sure why I always feel the need to cook for a crowd.. but I do! The other day I was flipping through the March edition of Women’s Day, and found an entire spread of slow cooker recipes. Now I know I should be slow cooking in a 6 quart pot for 1 person… BUT I love throwing things in a pot and walking into the most delicious smelling house. (I wonder if it drives Remi crazy all day?!?!)¬†

Here was my attempt at Thai Chicken straight from Women’s Day!

It was really great. The flavors of coconut and curry blended nicely. The peas also give it that punch of color. I decided to put this over rice instead of noodles.  While at FoodWorks this weekend I pick up some Arborio rice from the bulk wall. LOVE THE BULK WALL.  I also recently received my new Pampered Chef Rice Cooker in the mail!  1 cup rice, 2 cups water.. 15 minutes and boom.. perfect rice!

Since I had 6 quarts of this stuff, I had it for lunch too! I also shared the wealth with some co-workers!

Cilantro on top was the perfect compliment!

Last night was a 70+ kickboxing workout! Normally people walk in late to this class¬†and push their way to a spot! NOT COOL. I have never liked that one bit. Either get there on time, or don’t go at all. So last night the teacher locked the door at 5:35pm. IT WAS GREAT. Once you had a spot you didn’t have to worry about getting pushed around. I was in the 2nd row.. almost the 1st. I long to be right up front. Right next to the those people who go to the gym EVERYDAY and are in amazing shape. You all know who I’m talking about! Right? I guess you could say I’m a bit jealous. Although I’m not entirely sure if jealous is the correct word. Maybe envy¬†is a better word. I know I’m doing everything in my power to eventually get right up there with them. Someday. SOMEDAY SOON.

I wasn’t really hungry for dinner so I came home and made a monster!

.. a green monster that is! This was the best one yet. 3 cups spinach, 1 cups almond milk, 1 tablespoon vanilla, 1 tablespoon ground flax, 1 scoop vanilla protein powder and 1.5 frozen bananas!! Maybe I was just in the mood for a monster.. but this was awesome. I think I might start making more of them! You could also add in tons of different fruits. Check out the greenmonstermovement!

I have a Pampered Chef Show this weekend so I was testing out some new recipes. Again, not a good thing when you live alone. Monkey bread anyone?!?!

This is actually REALLY easy… you must make sure your pan can go in the oven!! Some can.. most can’t!! If you need one… let me know.. I’ll hook you up ūüôā

Place 6 tablespoons butter in pan. Melt. Add in cinnamon and PC Carmel Sprinkles. Open a can of Pillsbury Grands. Cut each into 4 pieces. Roll the pieces around in the butter mixture. Stuff them in the pan and bake for 18 minutes at 325!

I have so many more recipes to try.. who wants dinner?!?!?


Hello snow! I was so happy I was finally around for some snow this season! Remi loved it too. Can’t you tell by the photo?!?!?

Haha. Maybe not!

I left work early. When there was NO snow on the ground. Decided to run a few errands.. including a quick trip to Best Buy to pick up the new Biggest Loser Wii workout game! (Hey.. I was going to be home for more than 5 consecutive hours.. I needed something to keep me busy!) By the time I left the store, not even a mere 30 minutes later, the roads were covered! Normally a 15 minute drive took 1 hour+. Stupid, stupid, stupid me! Ah. Live and learn!

By the time I got home I was starving! Made a huge garbage salad. Basically a salad with everything from my fridge on it! This one included, cubed polenta, feta cheese, salsa, honey roasted veggies, dried cranberries and crispy things! It was great! Needless to say, by 8 o’clock I wasn’t very hungry and wanted something chocolate. Hence the creation of Peanut Butter Chocolate Chip Muffins!

I followed this recipe loosely!

Peanut Butter Chocolate Chip Muffins

  • 2/3 cup peanut butter
  • 2 tablespoons margarine — melted
  • 3/4 cup sugar
  • 2 eggs
  • 1-1/2 teaspoon vanilla
  • 1-1/2 cups flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk
  • 1 cup (6-ounces) chocolate chips – or whatever kind of chips you have on hand!
  • 1 tablespoon coco powder

Melt margarine. Add PB until mixed. Add in sugar, vanilla, milk, eggs.

Combine flour, coco powder, baking soda and baking powder. Add in to the mixture.

Stir in chips. I only had a handful of chocolate chips, so I added in Peanut Butter chips and White Chocolate Chips too!

Bake at 350¬ļ in a muffin pan lined with 12 baking cups ¬†for 20-25 muffins!


This were great muffins. I used this recipe analyzer to get a calorie count. This came in around 215 per muffin. Not incredibly good. Not incredibly bad.

Ah. Hoping to rise early enough to dig my car out in order to get to kickboxing on time ūüôā

I have great news! Last nights kickboxing class was successful. I think I have turn the corner, fluffed the pillows, rounded the bend.. however the saying goes… with my attitude towards the gym. It was a close call… and I was hoping I didn’t lose it for good.

I realized that not every single workout may be amazing. Some make just suck.. plain and simple. Some may be great. And some may be just OK.

My friends and I have been talking about starting something to keep ourselves on¬†track! What is better then weekly challenges?!?! Yesterday afternoon my co-worker/life long friend ¬†and I decided that we needed to start somewhere, so we¬†put together week 1. ¬†I will post them here¬†every week. My goal is to post the challenges¬†a few days in advance so you know how to plan your week, etc. I will be looking for imput on the different components for each week. I hope to start a little group coming to this page and keeping up to date! I haven’t set an end date, and maybe in the comments we can come up with some sort of reward at the end. In this moment.. I have no idea!

 This is just a foundation block and I plan on building a castle!

Week 1 doesn’t start till Monday January 10th! Plenty of time to prep for the week.

Failing to prepare is preparing to fail!
