Whoa. What a whirlwind this past few days! I finally finished my ‘secret’ project. And since it’s in the hands of the proud new owner I can finally show you!

Saturday was my dear friend, Heather’s Bridal Shower. I had no idea what to get her and I knew she would be getting all the mixing bowls, plates, spoons, etc… so I thought why not make her a photo quilt. Heather loves anything handmade and always has a camera in her hand.. I knew was hoping she would love this!

I also had their names embroidered to add to the quilt.

I didn’t plan my time very well while putting this together and actually¬†forgot how long it REALLY takes ūüôā I was up till the wee hours of the morning Friday night finishing this baby! (And I may or may not have asked for the quilt back at some point¬†to fix somethings :)) I also had this bad boys on the agenda…

They are cake balls…. and the EASIEST baked good to make EVER!!!

Cake Balls (originally taken from bakerella.com)

1. Make a cake using a boxed mix. Any shape pan will do. (If you want to be a bit healthy, make the cake with 1 12 oz can/bottle of your favorite diet soda. Omit the oil/water/eggs.. and keep the dark sodas with the chocolate and the light sodas with vanilla.)

2. CAKE MUST BE COOLED COMPLETELY. Break cake up in a big bowl. Were talking tiny pieces here! Take 1/2 a tub of icing and mix in. (If using soda, only 2 tablespoons icing. The soda makes the cake much more moist.) Mix.

3. Take a scoop. And scoop away onto to wax paper. (I used a 2 tablespoon Pampered Chef Scoop.)

4. Put balls in fridge for 45 minutes and then dip in your favorite chocolate. I got carried away and went a bit decorating crazy. I dipped some, I drizzled some and I even double dipped some. You can add almost ANYTHING at this point. Just make sure you are having fun! This is also a great kid friendly recipe!

I got this bracelet¬†a few days ago in the mail. It’s the slogan for¬†priorfatgirl.com, a blog I have been reading ¬†for some time now. Jen is a great writer and I love what she has to say. I also can relate to her, as she has lost over 90+ lbs. This is a girl whose footsteps I am trying to follow. I love¬†many ¬†different types of blogs, but those who can lose that amount of weight are extra ordinary in my book. It’s not 5 lbs here, 10 lbs there. We are talking almost a kindergartener!! I hope someday I get to meet Jen. But for now, I read her blog daily and allow my bracelet to be a reminder of what bites I’m actually taking!! Check her out… priorfatgirl.com

After knockout and flex edge, which start at 7:15 am, I decided to ‘reward’ myself¬†with a unsweeted iced green tea and a protein¬†dish from Starbucks. Love that¬†Starbucks has healthy things to eat when you need it RIGHT NOW!

¬†I’m finally making my list to go grocery shopping later on today.¬† I picked up this book the other day, after staying up WAAAAAY¬†to late one night reading through recipes¬† on happyherbivore.com¬†I found an awesome one for tonight’s dinner. It’s a recipe I can save and reheat for future lunches/dinners this week! Which will be yet again another challenging one ūüôā I’ll share soon!

Wow. This post is ALL OVER THE PLACE.. and I’m not going to change a thing!

When ya have a Monday off, the week flies by!! Especially when¬† your working on a special project due¬†this weekend!! I’m almost done and still have approximately 48 hours left! I think I can. I think I can. I can.

With this week being completely INSANE, I haven’t taken any photos, I have eaten out of Tupperware since Tuesday, I have been to the gym once, I have not run even though I have a 5K next Saturday… BUT.. I’m working on something you are all going to LOVE. At least that is my hope!

So. Happy Thursday to all of you out there! Only one more day till the weekend!

What a relaxing weekend. I’m going to be brief and explain in photos.

It started with a Chocolate Monkey РDark Creme de Cacao, Crem de Banana, fresh banana, chocolate syrup, vanilla ice cream. Topped with whipped cream and fresh banana. From the Red Parrot. (No calories counted for this one.. wink wink!)

It was a Monkey kind of weekend. This was¬†a¬†HUGE mug of coffee at my favorite breakfast place. It was wonderful after dancing the night away with old friends. I forgot what a workout dancing is… I actually woke up sore!

Newport was picture perfect. Oh… how I miss it here:(

We even woke up to snow one day!

Which meant warm yummy banana whipped oats! (Made in  Le Curset pot! We stayed at the home of a family I used to work for. Let me tell you.. they have my DREAM kitchen!)

 1 cup oats, 1 cup water, 1 cup milk + 1 sliced banana. Leave for 5 mintues or until cooked. Then whip with a whisk. The banana disappears and the oats are soft and creamy! (taken from KathEatsRealFood)

Then a visit with my girls! Look they can write their names now!

And lastly a brillant night of zumba! Sadly I didn’t take a photo last night! But I dug this one up from last summer! This lady ROCKS!

I was soooo excited to see her and finally be able to take another class! Think a 2.5 hour drive on Monday nights is tooo long for a zumba class?!?! LOL.

What a relaxing and rejuvenating LONG weekend! It was SOOOO great to see so many old friends! How was your weekend?

So.. It’s amazing when people mention this blog to me. In the beginning I used to tell my friends (well really, whoever I saw and would listen) to read the BLOG.. but that got old fast. I then decided why pretend to write anymore. BUT. I was missing it. I was missing the act of putting my feelings down on paper (eek. or a screen in this case!). I then decided I would continue with this little project. If for no one else, but for ME. If taking photos, writing and posting keep the french fries, milkshakes and triple cheeseburgers out of my mouth.. SO BE IT.

So THANK YOU.. to those who actually do read this shit amazing blog.. LOL. You all make this so much more meaningful than you might ever imagine!

Rewind to yesterdays lunch.

Who doesn’t love gift certificates!?!?!?

Went to Stockbridge… a great small lunch/dinner place downtown. I couldn’t believe how busy it was. I ended up ordering a lentil burger on salad. So good.

Stockbridge is known for their cheesecakes, so I couldn’t leave without sampling some desserts.

Red Velvet Cupcake and a oreo truffle. I honestly thought the cupcake was OK. The truffle on the other hand.. was AWESOME:)

After all those sweets.. I hit the gym for a spin class. I find it very funny how I become almost addicted to something and NEED ¬†to do it all the time. Then I’ll find something else and become addicted to that. Let me explain.. 8 or so months ago it was Zumba. I just couldn’t get enough of it. I went to classes ALL THE TIME. I then moved back to CT and couldn’t find a teacher I loved and became bored with it. I then moved on to KnockOut. KnockOut is an all bag class, choreographed to music with a heavy impact on martial arts. Kickboxing was also thrown in there for a bit. And NOW.. it’s all about spinning. It’s like a drug. I could easily spend hours at the gym and go to numerous spinning classes. Sigh. But real life gets in the way of that. I must learn to do all these things on an even level. To much of one thing is NEVER good.

Anyway, spinning was awesome! I also got to chat with a long-lost friend. Someone whom I haven’t seen in easily 12 years or so! Love reconnecting with old friends:)

I’ve been dying to try the laughing cow cheese wedges in pasta. I’ve seen it all over the blogosphere and last night was my turn!

I put 3 of these in this…

Mixed it around till they melted. I tasted it, and was not in love ūüė¶ It was so boring. So I added some salad fixin’ and it was much better. (Side note: this made 2.5 servings)

Interesting combo.. but I would definitely do it again. With all this eating healthy, I have come up with some crazy combos. Some work.. some don’t.. but I’m always asking myself what else can I add to that!

Breakfast was Siggi’s and granola! (The orange turned into a 10 o’clock snack!)

Have you ever had siggi’s before?!?! It definitely takes some getting used to. After the first bite, it only gets better!!

Not entirely sure why I always feel the need to cook for a crowd.. but I do! The other day I was flipping through the March edition of Women’s Day, and found an entire spread of slow cooker recipes. Now I know I should be slow cooking in a 6 quart pot for 1 person… BUT I love throwing things in a pot and walking into the most delicious smelling house. (I wonder if it drives Remi crazy all day?!?!)¬†

Here was my attempt at Thai Chicken straight from Women’s Day!

It was really great. The flavors of coconut and curry blended nicely. The peas also give it that punch of color. I decided to put this over rice instead of noodles.  While at FoodWorks this weekend I pick up some Arborio rice from the bulk wall. LOVE THE BULK WALL.  I also recently received my new Pampered Chef Rice Cooker in the mail!  1 cup rice, 2 cups water.. 15 minutes and boom.. perfect rice!

Since I had 6 quarts of this stuff, I had it for lunch too! I also shared the wealth with some co-workers!

Cilantro on top was the perfect compliment!

Last night was a 70+ kickboxing workout! Normally people walk in late to this class¬†and push their way to a spot! NOT COOL. I have never liked that one bit. Either get there on time, or don’t go at all. So last night the teacher locked the door at 5:35pm. IT WAS GREAT. Once you had a spot you didn’t have to worry about getting pushed around. I was in the 2nd row.. almost the 1st. I long to be right up front. Right next to the those people who go to the gym EVERYDAY and are in amazing shape. You all know who I’m talking about! Right? I guess you could say I’m a bit jealous. Although I’m not entirely sure if jealous is the correct word. Maybe envy¬†is a better word. I know I’m doing everything in my power to eventually get right up there with them. Someday. SOMEDAY SOON.

I wasn’t really hungry for dinner so I came home and made a monster!

.. a green monster that is! This was the best one yet. 3 cups spinach, 1 cups almond milk, 1 tablespoon vanilla, 1 tablespoon ground flax, 1 scoop vanilla protein powder and 1.5 frozen bananas!! Maybe I was just in the mood for a monster.. but this was awesome. I think I might start making more of them! You could also add in tons of different fruits. Check out the greenmonstermovement!

I have a Pampered Chef Show this weekend so I was testing out some new recipes. Again, not a good thing when you live alone. Monkey bread anyone?!?!

This is actually REALLY easy… you must make sure your pan can go in the oven!! Some can.. most can’t!! If you need one… let me know.. I’ll hook you up ūüôā

Place 6 tablespoons butter in pan. Melt. Add in cinnamon and PC Carmel Sprinkles. Open a can of Pillsbury Grands. Cut each into 4 pieces. Roll the pieces around in the butter mixture. Stuff them in the pan and bake for 18 minutes at 325!

I have so many more recipes to try.. who wants dinner?!?!?

My 10 o’clock snack… [yes.. even in the cube world you can have a morning snack :0)¬†]

The H2O¬†balances¬†out the green tea, which I need to keep me awake at the moment. Geeez and it’s only 11.. oh my. The Chocolate Peanut Butter on the other hand was pretty darn good.

It wasn’t as sweet as I thought it would be, so the first bite was a bit off.

After the next few bites though I was hooked. It was a great addition to the basic plain apple…¬†peanut butter-y with the¬†perfect amount of chocolate for a mid-morning snack. LOVE that fact that I can read all¬†the ingreditents and¬†I know what they are. No weird things added to these!!!¬†¬†I found these cute packets at a new health food store in my town called FoodWorks. It was .69 cents for one. Also, this packet was 170 calories.. do definitely a treat! I was just looking at their site.. they have 3 others that are only 80 calories a packs. I think I might try to go back to FoodWorks and pick some of those to try out! They help with the 10 o’clock slump time!

Completely enjoying the sunshine.. but longing for a snow day involving pj’s, movies and the couch. Think Mother Nature is done giving us snow?!?!

Illustrator. This was my morning! I drew this in class. Pretty cool.. right? This was only after a 30 minute lesson. I ¬†still have tons to learn! and yes.. I¬† know it’s missing a top ūüôā

Last night was color and design. The class is small. 3 students and the teacher. Makes for an interesting night. I’m hoping I learn more in these class… so far so good.. but last night was a bit of a drag! Oh well. My Mondays are incredibly long. I could give up my lunch time spin, but I would hate to do that. I need to invest in a dog-sitter or something. Whenever I come home on Monday nights, Remi just looks at me like… “WTF MOM!?!” Mondays I am probably the worse Mother EVER!

Eating has been equally as challenging.. luckily I was able to hit the grocery store this weekend to stock up on some healthy foods. I’ve been trying like hell to drink plenty of water and eat my greens. I’m loosely following a Choose to Lose program that is actually held in RI, last weeks food challenge was to drink 8 oz. of water before each meal. So that is what I’m trying to do.

The bridesmaid dress is here. I can wait to take a slight detour this weekend and pick it up. I’m dying to try it on and figure out what shoes would be best, etc!

Dinner is cooking away in the crock-pot. Which I’m a little nervous about. I don’t like leaving things plugged in, let alone turned ON when I’m not home. I consulted many people, ¬†all of whom seem to put my fears at bay for a while. I’m exited to return home after knockout, for a fabulous meal and much-needed cuddle time with Remi.

Off to tackle another project! I mean nicely complete another project!!

It’s Monday afternoon at 3 and I should have an amazing post up full of inspiring words and wonderful photos. All I have is a blank screen. So.. I’ll fill it with hearts….

Hearts

.. it is¬†Valentine’s Day after all! So Happy Valentine’s Day to you. V-Day isn’t the same if you don’t have kids to share it with.. or a significant other ūüė¶ Last year today, I was still a full-time nanny. I had 6 amazing kids to share the day with. This year I have a lovely cube. Oh well.. there is always next year right?!?!

My weekend wasn’t anything brilliant. Didn’t get much accomplished. I hate weekends like that! I did manage to fit in 3 classes, kickboxing, knockout and edge flex. All were fun and challenging.

I finally realized it’s ok to be in the front row of a class you love. I’m been taking them for so long now.. I know what to expect. I never really liked being the front. I always felt like people were watching me.. which is what I do to the front row.. off a beat.. just look at them right?!?! Well, Saturday after kickboxing a lady came up to me and told me how great I looked. How I was able to keep up with the class, knew most of the steps and if she was off she watched ME. I assured her she would get there someday and that I have been taking this class for the last 6 months. All said and done.. those simple words she spoke made my day. People are looking at me now.. it’s a scary thought sometimes… but equally as rewarding!

I have no special Valentine’s Day plans. In fact I have class tonight.. One holiday down with NO splurging on candy! Next up St. Patty’s Day.. which in fact will include lots of green beer and corn beef!!
