How goes it out there to all of those on this glorious Monday afternoon?!?! And no.. no one spiked my water.. can’t someone be happy once in a while.

So I was tweeting earlier that I would love for a healthy lunch to just appear on my desk without any effort. And ta-da…

.. I present you with a veggie sub (w.cheese) and baked lays! The lunch God’s where looking out for me today!

I also munched on some very blue popcorn from Coastal Popcorn purchased this weekend. This was cotton candy..

…what a great 3 o’clock snack 🙂 Perhaps it’s the sugar rushing to my head making me so happy at the moment. Who knows?!?

So I’m attempting this weekly challenge idea one more time! Second time is a charm.. right?!?!

Hi Ya’ll!!

How was your weekend? Mine was great. Remi and I packed up and headed 4.5 hours northeast to Buxton Maine… about 30 minutes west of Portland… to visit some friends and furry creatures 🙂

Friday night, Remi and I arrived and mingled with the 5 other dogs that live in the house we were staying at.

In no particular order: Tucker, Riley, Baxter, Jake, Eddie and Remi. It was a bit tricky getting this photo.. hence either Baxter or Riley is looking away! Woops.

Saturday was full of outlet shopping and another place off the Flavortownusa List!

Welcome to Bob’s Clam Hut! I saw this place on Guy Fieri’s show Diners, Drive-ins and Dives 🙂 I’m trying to get to at least one per state!

Bob’s Clam Hut was flawless. It was a slice on summer on a cold winter’s day. I got a lobster roll, which tasted perfect and included a butter/toasted bun. The pickle was even outrageously good!

Also had to sample the calm cakes. Yet again.. these didn’t disappoint!

And had to try a few fried shrimp!

The atmosphere was great on a chilly winter day.. I can only imagine what it must be like on a summer’s day! Check out the menu. So delicious. I could seriously eat one of each!

After all that eating.. shopping for clothes was OUT. What’s better than dishes, spoons, forks and bakeware!?!?! Not much.. so that was my next treasure to hunt for! The le creuset outlet was first on the list! Someday I will have a full set. For now.. I just look and ooogle the pieces.

AND a Crate and Barrel Outlet! One of each please.

I couldn’t quite get out of this one so easier. These measuring spoons where calling my name! I just couldn’t leave without them!

I will get plenty of use out of these babies!! I also finally found those little ceramic spoons you see all over the blog-sphere! Excited to use them and hopefully take some fun photos!

On the way home we stopped at When Pig’s Fly Bread. 

First of all, the parking lot was packed. Which says a lot right there! As you open the door and take a few steps in.. your hit with the best smell of baking bread! “At When Pigs Fly, we bake old-world, artisan breads fresh, every day, using the finest organic, natural ingredients. LOL. How about 15 different kinds of bread for the tasting!

Ended up with a loaf of Veggie Potato Latke Bread! Holy Yum. I put half in the freezer for fear of waking in the middle of the night and devouring what is left!

A quick trip to the art store to fill up on supplies for tomorrow night.. turned into a trip to Coastal Maine Popcorn Co. Name a popcorn flavor and I’m pretty sure it was there… including by not limited too.. dill pickle, white cheddar,  black pepper and sea salt.. can’t forget cotton candy.. better yet.. you read the list!

I think this stuff individually bagged would be a great give-a-way at a trade-show… who wants another pen or another notepad anyway.. What do you guys think?!?! Plus its blue.. one of our colors!

Lastly we stop at this lighthouse!

It was great to be outside and in the sunshine for a bit! We had tons of fun walking the rocks and taking photos!

It was a great weekend.. I learned once again.. how quickly diet and exercise can change when your out of your atmosphere! It’s ok though.. life would be pretty boring without some ups and downs! Back to the eating healthy/working out grind tomorrow!!

Another night of cooking in my kitchen. I must say, I would be very happy cooking ALL DAY. It’s so relaxing and I LOVE tasting all the new and wild things that are created in there. Last night was Gorgonzola Fig Pizza with chicken.

Gorgonzola Fig Pizza

Balsamic Fig Compte

  • 1/2 tablespoon olive oil
  • 1/2 cup diced onions
  • 1/4 cup vegetable broth
  • 1/4 cup balsamic vinegar
  • 1 cup chopped fresh figs
  • 1 tablespoon honey

The recipe called for fresh figs.. however.. after a nice trip to the store.. I discovered fresh figs are a seasonal thing. I should have know. So I went with what I thought would be the next best thing.. Dried Turkish Figs. I doubled the liquid.. broth, vinegar & honey!

1. Place olive oil in hot pan. Add onions and cook for 5 minutes.

2. Add the rest of the ‘stuff’ and bring to a boil over high heat. Lower heat.. simmer and cook until thick and syrupy, about 10-15 minutes. Remove from heat.

Pizza Things

  • whole wheat pizza dough
  • gorgonzola cheese – crumbled
  • grilled chicken
  • sliced pears
  • chopped nuts – I used pecans
  • anything else you can thing of

1. Heat oven to 400º. Gather supplies.

2. Spread WW dough on greased cookie sheet or stone.

3. Spread compte, layer on pizza fixins’!

4. Bake for 20-25 minutes. Watch for a nice brown crust!

5. Slice up and enjoy!

Paired with a spinach salad!

This was an easy to make meal. Lots of flavors, can use come leftovers, and is relatively easy 🙂 Found on the carrotsncakesite! Seriously love Tina’s work!

Working on a FUN weekly challenge for next week!




Not sure where to even begin. Last night, turned into a feast. My friend Liz decided to get snowed in at my house.. we work together.. so it would be an easier commute from my house to the office than hers. It worked for me.. for now I had 2 people to cook for instead of one. Makes cooking so much more fun:) Before leaving work I scoured the internet in search of the perfect blizzard dinner. I think I did quite well.

Sweet Potato Stacks w. Gorgonzola Dipping Sauce

  • 2 sweet potatoes shredded
  • 1/2 cup egg white substitute
  • 1/2 parmesan cheese
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon pepper

1. Preheat oven to 425º. Set wire rack on top of a baking sheet.

2. Peel and shred potatoes.

3. Add the rest of the ‘stuff’. Mix and shape into patties.

4. Bake for 25-30 minutes or until crispy 🙂

So these were great.. but they needed something. Liz mentioned gorgonzola sauce. Ask and I shall create.

I put the following in a sauce pan and let it simmer away until thick.

  • 1/4 skim milk
  • 1 tablespoon flour
  • 2 tablespoons butter
  • 1/4 cup on gorgonzola crumbles
  • garlic powder

All measurements can change depending on taste and texture.

These were so good.. mark my words.. I’ll be making these again 🙂

On to the main course!

Macaroni & Cheese w. Cauliflower & Shrimp

(Beware: this makes ALOT of food. Liz and I ate this for dinner, then ate it for lunch, shared with the landlord upstairs and gave a few bowls full to the guy who came and help shoveled!)

  • 12 ounces multi-grain elbow macaroni
  • 1 head roughly chopped cauliflower
  • 1 cup breadcrumbs
  • 1/2 fresh flat-leaf parsley – chopped
  • 3 tables olive oil
  • 1 tablespoon grated garlic
  • S&P
  • 1 finely chopped onion
  • 1 1/2 cups grated extra sharp cheddar
  • 1 1/2 cups reduced fat-free sour cream
  • 1/2 cup skim milk
  • 1 tablespoon dijon mustard

1. Boil Marconi. With 3 minutes left, add cauliflower.

2. Drain Marconi and cauliflower.

3. Add olive oil to pot, then onion and garlic. Cook 5 minutes or so. Add shrimp. Cook until done… another 8-10 minutes.

4. Add in Marconi, cauliflower, cheese, sour cream, milk and mustard.

5. In a separate bowl, add chopped parsley to breadcrumbs and 2 tablespoons olive oil.

6. Place mixture into a 3 quart casserole dish. Spread breadcrumbs on top.

7. Bake for 15-20 minutes or until top is browned.

This dish was soo good. Great for a side dish for a pot luck or party!

I know I must sound like a broken record.. but I awoke to more snow.. .and more digging out!

Seriously.. the snow officially has NO PLACE TO GO.

Thank goodness its pretty 🙂 Come on sun.. melt the white stuff!

When Liz and I came back in from shoveling we were hungry. It was ok to be late for work… good thing because my street didn’t get plowed for a while. I was so excited to have time to make FRESH oats. In fact, I decided to make an  oatmeal bar.

  • 2 bowls of banana whipped oats – 1/2 cup oats, 1/2 skim milk, 1/4 H2O, 1/2 sliced banana & 1 tablespoon chia seeds. Boil, then simmer for 5 minutes.. then whip for a few minutes until the banana is gone and the oatmeal is creamy.
  • chocolate chips
  • peanut butter
  • craisins
  • coconut butter
  • cinnamon
  • cardamon
  • agave nectar
  • anything else your heart desires

This was my bowl.

Ended my 3 hour work day with a 3.6 mile run at the gym. I’m kind of sore at the moment.. but it was great. It’s amazing what a new playlist can do for a workout! The next 5K I signed up for is going to be here before I know it… MUST KEEP RUNNING 🙂

All I can do is laugh. Who do we think we are getting all the SNOW?!?! I’m guessing all the JEEP and other 4X4 dealers are going to be quite busy in the next year or so. I know I’ll be hitting them up!

If you have to drive… PLEASE BE SAFE! And slow down… there are some crazy people on the roadways. Really.. if your going to drive on my ass.. then I WILL be slowing down!

OK. Before I go all green on you.. I NEED to tell you about some awesome ‘balls’ I found. Don’t let your mind wander too far. I like to call these Chocolate Balls. There have been different versions of these ‘balls’ all over the blog-sphere, so I give credit to all. They are sooo good. I should come up with a fun, crazy name, but Chocolate Balls it is! Enjoy!

Chocolate Balls

(Sadly I didn’t take a photo of the plate FULL… Where is my head sometimes?!?!?)

Collect the following ingredients:

  • 3/4 cup oatmeal
  • 1/4 cup chocolate chips
  • 2 tablespoons peanut butter
  • 2 tablespoons shredded coconut
  • 2 tablespoons almond milk
  • 1/2 scoop of protein powder (vanilla or chocolate)
  • 1 tablespoon ground flax

(These mini bowls were a house-warming presents from Jess and Sandra when I moved in NPT. Thanks guys.. I LOVE them.. and use them all the time!)

1. Melt the chip with the PB and almond milk in a sauce pan. Once melted add in the coconut, powder and flax. Stir. Then add in the oatmeal.

2. On a cookie sheet lined with wax paper, scoop or ball 2 Tablespoons on this amazing stuff. But in fridge for 10 minutes.

3. Take out and ENJOY. Honestly these were soooo good 🙂

Ok. Now time for some GREEN!!

Dinner was whole wheat pasta, cubed chicken, and brussel sprouts with garlic, oil olive, sprinkle cheese and S&P! Then.. I decided I was going to drink my salad and dessert in one! I made a green monster. I’ve made these before, and LOVE them.. it’s not really a winter thing.. but who cares!!

Basically a green monster is the following blended:

  • a couple cups of fresh spinach
  • a cup of almond milk
  • a few ice cubes
  • 1 tablespoon chia seeds
  • 1 scoop amazing grass powder
  • whatever fruit you want.. tonight was frozen mango from Trader Joe’s and a strawberry/banana mix found in the back of the freezer!

1. Blend in a blender. Pour into a fancy glass and enjoy!

I know it may look gross… but I wish you would taste it before you judged the monster.. they are soo good and don’t taste like spinach AT ALL 🙂 If your interested check this website out.. there are lots of different ideas for monsters!

I’m watching TBL, while doing a bunch of other stuff. I’m just not into it like I once was! Hmmmm.. perhaps it’s because Jillian and Bob are leaving?!?!?… not really sure :/

I just love snow. I love the idea of not having to go to the office first thing in the morning. I love how I can hang with Remi for a few more minutes and not run out the door like normal. I love the look of fresh snow.. it covers up all the brown mush! I just need to figure out how to get enough of it again.. so we can STAY HOME  for the ENTIRE day. I have lots of scrap-booking, quilting, ebaying and cooking to catch up on 🙂

Classes re-started  last night. I’m wicked excited for these 2 upcoming classes. One is Color and Design.. hmmm.. I think I should fit in perfectly 🙂 I got to class around 6:45pm.. it starts at 7pm.. and there was one girl sitting there. We chatted for a bit, then it was 7pm and I was like.. where is everyone. Turns out the class has 3 students in it!!! 3 students. I thought my Intro to Graphic Design was small with 9 students.. but 3.. geez. I received a huge list of supplies I need. Very excited to finally go to the art store. We shall see how Computer Drawing goes.. first class is Wednesday.. right when the snow is supposed to start.

Last week I had a Pampered Chef party. I was so excited. It was for a lady that my Mom used to be friends with years ago. This lady basically watched me grow up from distance. Anyway. She has 5 boys. Ages ranging from Junior in College to 11 (I think!). I was looking around the kitchen trying to figure out where to set up all my ‘stuff’.. when I saw this on the wall!

I know you can’t read it.. but above the chalk board is says Daily Specials. I thought this was just GREAT. Talk about being organized. It works great, because all the kids know exactly what’s coming, also, the Mom know what she needs for which night and when. I hope to someday be as organized as this family!  PS- BFD = Breakfast for Dinner. I made reservations for this night.. LOL

That is it. Only one word: SLACKER.

I would love to write, that  this weekend was crazy and I didn’t have a second to post. But that would be a lie. Yes… I was very busy.. Yes.. I took pictures of everything almost everything I ate. NO.. I didn’t post!

Friday night was a couch date night. Ended up watching Leap Year from Netflix. First of all.. I LOVE Netflix. Second of all.. I LOVED Leap Year. Makes my urge to go to Ireland and find a man with a brogue that much stronger. Sigh. Someday.

Saturday morning was Kickboxing with Diane (Love that lady!) – Then a surprise shopping trip with Mom. I’m in search of a dress to wear to a rehearsal dinner in April and I want it to be GREAT. Let’s just say the 16 didn’t fit.. it was to BIG. Yippiee 🙂

Sunday morning was more Knockout with Diane, then grocery shopping and finally chili time! A long-lost friend came over for dinner so it was great fun 🙂 I know.. sadly no photos… again SLACKER!

Last night I packed up my bags and was ready to head to the gym early morning today. Needless to say that DIDN’T HAPPEN. I just don’t get it. Sunday morning class starts at 7:15AM and I have no problem getting there… on a Monday morning however, 7:15AM might as well be 5:15AM! I just can’t get up. It makes be crazy. The real purpose for pushing with an early morning workout is due to the fact that I start classes tonight. So every Monday and Wednesday I’ll be in class until 9:20! Which is great and I’m excited about it.. just limits my time elsewhere.. like the gym! I don’t want to be one of the gym brats, but it totally messes with  your chemical balance when you work out all the time and then just stop… at least for me. I’m not saying that I’m done with the gym.. I guess I’m saying I’m not one that loves change. Therefore, I need to figure out a way to actually get up on the weekdays when my alarm goes off and not roll over for another hour or so. Hmmm… anyone have any ideas?!?!?

As far as weekly challenges go.. this will be an off week. There are things that I’m hoping to accomplish this week, and I’m not entirely sure how to included them into the weekly challenges. I’ll keep you posted!

Anyway, Today is Monday January 24, 2010. (Pointing to a calendar as we read along. From the student teaching days. Starting to miss them. Is it bad to miss them after 5 years?!?!?)

I thought I just had this driveway cleared. Guess again!

I like the snow. It doesn’t bother me anymore, especially when I have no plans except to be at the office. I’ll get there when I can.. wink!

Last night I went to kickboxing, new teacher on Thursday nights.. needless to say.. I almost died! (Hahah.. well not REALLY!) It was quite intense and I still feel it in my shoulders. I could sure use a back rub. Gonna have to start working on this boyfriend thing… side note.. a boyfriend would sure come in handy to help with some shoveling too!

On to dinner. I was hungry and wanted chicken. Strangely odd. I was craving chicken. The plan. Honey mustard Chicken, curry cinnamon butternut squash and potatoes au gratin. The verdict. Everything was good but the potatoes.

Potatoes Ready.

Mixed with almond milk and whatever cheese was in the fridge. (Swiss, mozzarella and parmesan)

All lined up. Chicken with mayo/honey mustard mix. Cinnamon, curry, S&P and olive oil on cubed butternut squash.

Potatoes. Ediable after another 20 minutes in the oven. (Not so sure the almond milk was the best idea!!)

Lots of ebay listing while the snow melts a bit.
