See. There is a really good reason why there are so many cupcakes in the office today! Tonight, my mother and I were going to be taking a cupcake decorating class. But the high winds decided to grace us with there presence tonight so the class got cancelled. Good news to the folks I work with, for now there is a few dozen iced cupcakes to eat! However, for this girl, this means torture! I could devour all of them in 10 minutes flat. So I picked my fav…

and SLOOOOOOOWLY ate it. ONE. BITE. AT. A. TIME.

100% successful. I know overnight oats have been all over the blog world lately. I have made a few batches here and there but have never made a batch this good. So I had to share!

Pumpkin Overnight Oats

  • 1/2 cup oats
  • 1.5 tbsp chia seeds
  • a dash of cinnamon, nutmeg and ginger
  • 3/4 almond milk
  • 1 tbsp agave nectar
  • 1/3 cup canned pumpkin

1. Mix oats, seeds and spices.

2. Add in milk, nectar and pumpkin.

3. Put in fridge uncovered till morning.

(next morning)

4. Jump out of bed so excited to see what is in the fridge!

This by far, was the best batch EVER!

Ahh. Happy Wednesday. Wednesdays are normally killer days. I’m in class for 6 hours straight. Who’s idea was it to go back to school anyway? It’s all good though. I’m learning a lot! I got out early and thought I would love to attempt to make it to a 5:30 kickboxing class. Well that was a no go.. so Liz and I drove around and found a BRAND NEW path to run!

Who knew Derby Greenway Trail was so close to my new home! I’m very excited we found this tonight. Also a bit mad I found it sooo late. Not looking forward to darkness at 5:30pm! Ahhh. Oh Well.

So peaceful. I felt like I was going to DIE  at this point. But still.. Oh So Peaceful 🙂

Lesson of the night = SLOW DOWN WHEN TAKING A PHOTO (or put a different setting on!)

There will be NO Road Closed signs for this girl! I’m on my way. There is no holding me back now!

Is there something that you have always wanted to do, but just didn’t?!?! Maybe you couldn’t find time, or couldn’t find a friend to do it with or many $ was tight, or there was some other excuse that was conjured up?!?! Well. Now is the time to do it! I have longed to find the path above for a few months. Across the river from this path there is a smaller path, .5 miles around, I walk with Remi there all the time. I have watched people run this path, which I now know is called Greenway Trail. I have longed to run it too. I thought.. yeah right.. you run on a path. You’ll get run over. Well, tonight was the night. I didn’t run the whole thing. But I made a good dent in it! Make a good dent in something that you have always wanted to do! Just do it! Don’t let excuses hold you back!

A Bj’s run was in store shortly after our 3.44 mile walk/run! We got some interesting looks as 2 sweaty girls were roaming the isles! BUT. Look what is finally out!

Did you know you can only get canned pumpkin this time of year? I know.. total bummer! I’m totally stocking up with many cans before they are gone. Let’s see how long 3 huge cans lasts for this single girl! I’m soo excited.. I can picture recipes already. Pumpkin cookies, pies, breads, oats.. yes.. oats. They are actually in the fridge as I write and you read:)

What are you going to make a dent in today?

Our good friend Ryan decided that we needed a Newport Family day! When I lived in Newport we would get together for Sunday Family dinners and random nights of pure fun! I miss that. Ryan thought Sunday was the perfect day to be together. It was amazing I was actually in town for one of these ‘family’ days! He had everything planned out to a T! What a guy:)

It all started at Tiverton Four Corners! Our first stop was Milk and Honey Bazaar.

Milk & Honey Bazaar is an artisanal cheese and specialty foods market located in historic Tiverton Four Corners, RI. We carry over 100 varieties of cheese and we add new items every week. Visitors are encouraged to sample our cheese selection, as this is the best way to find your ideal cheeses!

They have a spread that you can taste. We had a lot of fun! My favorite was the sage, so I had to pick some up for the beach part of our adventure. Have you tasted sage cheese before? It’s really good. If you ever get the chance to taste new and interesting cheeses go for it! What do you have to lose?

Snack time was held at the Provender, Inc. The Provender is a local deli with great sandwiches, cookies and special old-fashioned sodas. It definitely had a special, old worldly feel. The perfect place for a Sunday afternoon snack!

Guess who the odd man out was?

Yup. It was me. Sparkling lemonade and a ginger oatmeal cookie.. pure perfection 🙂

What a great place. Can’t believe I lived in RI for nearly 9 years and have never ventured over to Tiverton. Total bummer on my part! But so glad I had the chance to explore yesterday! Time to go on the next leg of the adventure!

Do you love the beach? I miss the beach. I was happy I was at the beach Sunday afternoon 🙂

One last special stop… DINNER. We piled into the cars and still had no idea where we were going for dinner. It was Ryan’s secret for all of us!

We pulled up to Stone House. Stone House is a very secluded luxurious  inn and restaurant. In the summer their main restaurant the Pietra is open. However, since it is now off-season (hard to imagine.. where or where did the summer go?!?!?)  we ate at 1854 Tap Room, which is their bar in the basement of the main house.

It was awesome. Dark and cozy, with a fireplace going! I was soo excited that they had Shipyard Pumpkin Ale.

The rim initially had some sort of cinnamon sugar mix… however that didn’t last long!

Dinner was butternut soup and a traditional caesar salad! Both were VERY  delicious.

The night ended with more pumpkin ale around the fire!

Saturday Morning at 8:30am I ran my very first 5K!

I wasn’t to prepared for this race fitness wise! Clothing wise.. I was right on.. I laid out my clothes and knew I had to wear my ‘favorites’!

The Mansion Run was held at Salve Regina in Newport, RI. I was happy to be returning to the Salve Campus and more excited that this was were my 1st ever 5K would take place!

Oh Salve.. How I miss thee!

We gathered outside of Rogers Rec. It was great.. there was music, food, we  picked up our numbers (I was actually going to get my own number this time) and got revved up for the extreme race that about was take place! People… a 5K is an extreme race at this point in my life. If all works about in a few months I’ll look back at the sentence and laugh.. LOL

I was getting a bit nervous. Many thoughts were floating through my head. What the hell was I thinking? Look at all this people with their running shorts and music in hand! These people ‘look like they know what there doing’. How are you going to do this? Don’t fall! I can leave now and NO ONE would notice. As all these thoughts spun around up there, then I glanced around and saw all my friends. I knew I could do this!

READY. SET. GO. (Ahhhh… wait.. what am I doing?!?!? One foot in front of the other.. just keep going.. Don’t stop. GO. GO. GO.)

I was great for the first 1.5 miles. I kept a few people in site and wouldn’t let myself fall to far behind. I even caught up at one point and gave Steph a tap on the shoulder. I just kept running. Mike, Michael, Steph and Heather were right in front of me. I knew I could do this. Then BOOM. I couldn’t. But I knew I HAD to. Then Mike turned around. He was waiting. For me? Yup.. for me. We ran a bit together then they were off again. I just kept going. I knew if I stopped there was no way of starting up again. I was a few seconds away from walking and then I saw Heather running the other way. Um.. Heather the race is the other way! LOL. She was running towards me 🙂 We ran together for the last mile or so. She kept me going. Singing, laughing and distracting me from the distance we still had to go. We turned the corner together and spirited to the finish line together. 38:49. Not bad for my 1st 5K ever! Thank you guys!

An amazing group!

These feet did it! Then completed something that was impossible 6 months ago! And now they wanted to explore Ocean Drive with Ma’s in hand :0)

The most calming place EVER!

Hmm. Wonder what this was part of at one point? Maybe a house, wall, driveway or perhaps a piece of brick that never made it to its original destination and decided OD was the place to live!

Can’t you just hear the wave crashing against the rocks?!?!

Ocean Drive is a great place to fly a kite! Every weekend you can find tons of people flying kites. It’s a pretty awesome sight!

I’m in the MIDDLE of the road. I’m in the middle of my weight-loss plan, in the middle of learning about my new job, in the middle of figuring out where I REALLY want to be. Currently I’m in the middle of the road. It’s a good place to be. I like to look back and see how far I have come on my journey. I also enjoying looking in the future to see where I still have to go 🙂

You can do ANYTHING you set your mind to! So go. Set your mind. And do it 😉

Hi. Happy Friday!

Lists. I’m a list kind of girl. I have multiple lists going at once. A work list, a home list, a workout list, a music list, a bucket list…. and they keep going and going. My lists grow daily. And you know what? I’m ok with that! I’m never going to have a blank to do list. And why would I want too? I would have NOTHING to do! I’m learning to let go a bit. Focusing on the important things in life and leaving the others behind. I have this fear of having NOTHING to do! I have been in my new apartment since May 15 and there has not been one day where I have stayed home. I’m not entirely sure if this is a good thing or a bad thing. I’m going to go with a 50/50 on this one. It’s good to keep busy, but bad to over do it! I’m looking forward to the day I don’t get in my car and drive away. I don’t think that day is in the near future… but I am starting to welcome it with open arms!!!

I found the following list over at Oh She Glows! Angela is just wonderful. I have read her blog for about 8 months now and I have learned so much.

If I were to tell my younger self some things I have learned along the way they would be:

  • This too shall pass. With each year that I age, I am happier. if you are in a hard time, hold on. I used to think my high school days would never end (yes, I got my share of teasing!), but life gets so much better.

I will be running/walking in my 1st 5k ever tomorrow morning at 8:30am in Newport RI in the Salve Mansion Run. Yes.. that’s right.. it’s a Newport weekend. I wish I could say I’m better prepared. But I’m not:( It has been one CRAZY week and I have not hit the mileage I would have liked too! I’m bringing my garmin so I can track the miles. I’m hoping if I can judge where I am in the run, I’ll be able to complete in better. But who knows what is really going happen!! Update on the 1st 5K coming soon!

This recipe was found by Heather, a good friend of mine, mid-summer in Clean Food by Terry Walters.

Original Recipe: Black Bean Salad

  • 4 cups cooked black beans
  • 4 tomatillos
  • 1 red bell pepper
  • 1/2 red onion
  • 1 1/2 cups corn
  • 2 jalapeno (if using fresh only 1)
  • 1/3 cup cilantro
  • 1 teaspoon ground cumin
  • juice of a lime
  • 2 tablespoons extra virgin olive oil

Cut, dice and chop all of the above. Stir and serve with your favorite chips!

Edamame Version of the BBS

  • All of the above
  • 1 cup cooked and shelled edamame

This recipe is very versatile and can really be used with anything. I didn’t have a red pepper when I made mine, so I used a purple pepper. ALMOST ANYTHING GOES :0)

This made the blog… due to the fact that many people asked me and keep asking me, “what was in that Black Bean Salad?”

OH. MY. GOODNESS. Thank god The Biggest Loser is back on TV. This is my all time favorite show. Last season I didn’t miss a second… yes.. I really mean that. Every SINGLE second I watched with big wide eyes, trying to learn as much as I could. Well I have some very bad news about the beginning of this season. The entire show wasn’t DVR-ed. I know right. I almost died when I realized this happened. I had a gut feeling something was going to go wrong. Oh well. I’ll be watching the entire thing tomorrow on HULU!  Anyway, I’m very excited to see Bob and Jillian again! I missed them both very much! Speaking of Jillian, guess who will be meeting her in less then one month?!?!? Me!! I’ll do a WHOLE post on that sometime soon!

Rewind a few hours:

Tuesdays are crop share pick up day! Check out the goods from today!

Missing from this photo is a head of cabbage and 4 ears of corn. I receive crazy amounts of veggies every week. I think next year I will opted for a smaller share!  We have never gotten apples before, so that was total plus. I actually ate one on the way home from picking this up! It was so yummy. Crisp and sweet, but not too sweet!

Now what to do with these!

Check out this pepper. It wasn’t quite sure if it wanted to be a green pepper or a yellow pepper. I also received brown peppers today! Who knew peppers came in so many colors!

Tuesdays consist of cropshare pick up, knockout (kickboxing), cooking a healthy dinner (with all the veggies) and now watching the Biggest Loser.

Dinner tonight was Pizza! It started out to be a recipe I’m suppose to be practicing for my 1st Pampered Chef Party ever on Thursday night, however I was missing key ingredients so I turned it into something different! I love being spontaneous in the kitchen!

My pizza was a bit crazy. The following was layered one after another!

started with a flat out then added

hummus

chopped swiss chard

yellow/green pepper

chopped artichoke

feta, mozzerlla and parmesan cheeses

Liz made a similar pizza – minus the swiss chard and add tomato and crushed red pepper

I turned what was suppose to be a artichoke spinach bread into articoke and spinach dip!

Articoke and Spinach Dip

  • 14oz can chopped artichokes
  • 1 box frozen spinach – thawed and drained
  • 1 cup mozzarella cheese
  • 4 ounces crumbled feta cheese
  • 1/2 cup diced red pepper
  • 1/2 mayonnaise
  • 1 pressed garlic clove
  • 2 tablespoons grated parmesan cheese
  • s and p

1. Mix all together. Place in baking dish.

2. Bake at 375 for 15-20 mintues or until bubbling on edges!

This was so good and random! Perfect for some Sunday night football action!

A friend of mine was visiting a few months ago. He has a restaurant.com account so we went on a printing spree! After the weekend was over a  few were left, including a coupon for Downtown at the Taft. My friend, Liz, and I decided Friday night was the perfect time to use the coupon. The Taft had an amazing atmosphere. It was an old hotel renovated into a restaurant and apartments. We have very high hopes this place was going to be amazing! It looked great and I could envision bringing guests here someday!

We were seated upstairs. It was so big and airy. A great shade of red too!

A few from above. Then it was time to order! We decided to split 3 different apps and a pizza!

When we originally order this we were very excited!

Welsh Rarebit (A Yale Tradition)

Cheddar cheese dish topped with bacon & scallions and served hot with toast points. I have never heard of this! It was a Yale Tradition so it HAD  to be good.. right?!?! Wrong! It was awful. Liz and I managed a couple of bits and after each bit we were hoping it was going to taste differently! It tasted like stale beer and cheese, with some stale bread!

We then moved on to potato chips. You can’t mess potato chips up right?!?!?

WRONG!

Sweet Potato Chips

Crispy sweet potato chips with creamy gorgonzola cheese sauce. This would have been AMAZING… but it came out cold! Booo! 2 down 2 to go!

Blue Wedge Salad

Iceberg lettuce, crispy bacon, diced tomato with crumbled blue cheese dressing. This was ok. The dressing tasted like it was just poured out of a bottle. At this point I was ready to bounce. However, we had one more thing to taste. A Pesto Pizza!

Pesto, fresh tomato, roasted vegetables and mozzarella. I was eyeing the brick oven as I walked in so I knew this had to be a winner. And it was! It was good. Nothing to write home about. Liz and I devoured this!

Overall, I don’t think I will be heading to this restaurant anytime soon. I have also come to the realization that restaurant.com may be good. However, you have to do your homework 100%. A lot of the restaurants are on there due to the lack of customers. They are trying to prompt their business. While some of these restaurants maybe new and don’t have a big following yet, some don’t have a following for a reason. If you decided to use this site, do you homework, check the reviews see what people have to say before you’re sitting there and some gross cheese dish is presented to you! Now I must say, we might have hit this place on the wrong night, which happens too sometimes. After tonight, I think I will stick to places I know for a while!

After dinner we walked around New Haven a bit. The more I’m there, the more I love it!

How cool would it be to live here?!?!  One of the many Yale dorms!

While walking around downtown, I got a huge urge for an espresso martini from the 5th! Well, 2 things first, one, the 5th WAS located in Newport RI AND two, they have been closed for over a year! So I was determined to find a similar drink in my new favorite city. And look with I found!

Perfection! We ended up bumping into Pacifico! With a little Latino inspiration, this place looked amazing and smelled great too! I will definitely be trying this place next!

What a wonderful ending to a CRAZY week :0)

First of all… can I just say.. how cute is Remi?!?!? I come home from work and find him nestled in my Vera bag! Glad he was comfy and cozy all day..

and onward to dinner. I had the craziest day ever at work! Learning new design software is always exciting, but today it was just down right exhausting! After a quick jaunt at the gym I came home and made the quickest pizza of my life. Meet my new favorite… THE GARBAGE PIZZA.

The Garbage Pizza

  • Flat Out – Or any pita bread
  • 1/2 avocado
  • dandelion greens
  • 1/4 hot red pepper (or to your liking)
  • 1/2 yellow squash
  • 1 black bean burger
  • silvered crystalized ginger
  • silvered dried apricots
  • fat-free mozzarella
  • oil, salt and pepper

1. Dice, chop and slice everything above. Gentley blend avocado with fork.

2. Spread avocado on flat-out, spread dandelion greens, yellow squash, red pepper, ginger, apricots and mozzarella. Drizzle with olive oil and sprinkle S and P.

3. Bake at 350 for 15ish minutes. Place burger on tray too!  Watch it! Don’t let it burn.

4. Cut burger up! Place on top and enjoy!

  

Anything would probably work on this pizza. It was sooo delish :0) Didn’t realize the red pepper I had chopped was a HOT one until my first bite! Ouch. I never know what I”m going to get in my crop share each week. I have learned my lesson.. always make sure what your cutting up!

Absolutely wonderful after a long day! Light, fresh, crisp and refreshing!  Now it’s time to list some amazing things on eBay!
